Ingredients for Chicken Biryani (Serves 4)

For the Chicken Marinade:

  • 500g boneless chicken thighs (cut into chunks)
  • 1/2 cup yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 1 tbsp lemon juice

For the Rice:

  • 2 cups basmati rice (soaked for 30 minutes)
  • 5 cups water
  • 1 bay leaf
  • 3 green cardamoms
  • 1-inch cinnamon stick
  • Salt to taste

For Cooking:

  • 2 medium onions (thinly sliced)
  • 2 tbsp ghee or vegetable oil
  • A few saffron strands soaked in 2 tbsp warm milk
  • Fresh cilantro and mint leaves for garnish
  • Raita (yogurt sauce with onion, cucumber, and spices)

Step-by-Step Chicken Biryani Recipe

Step 1: Marinate the Chicken

In a bowl, mix all the marinade ingredients. Add chicken and coat well. Cover and refrigerate for at least 2 hours or overnight.

Step 2: Prepare the Rice

Boil water with whole spices and salt. Add soaked rice and cook until 80% done. Drain and set aside.

Step 3: Fry the Onions

Heat ghee/oil in a pan. Fry sliced onions until golden brown. Set half aside for garnish.

Step 4: Cook the Chicken

In the same pan, cook marinated chicken with fried onions until the chicken is tender and oil separates from the masala.

Step 5: Layer the Biryani

In a large pot, layer half the cooked chicken, then half the rice. Repeat. Top with saffron milk, fried onions, mint, and cilantro.

Step 6: Dum Cook (Steam Cook)

Seal the pot with a tight lid or foil. Cook on low heat for 15–20 minutes. Let rest for 10 minutes before serving.

Step 7: Serve Hot with Raita

Gently fluff the biryani with a fork. Serve with a bowl of chilled raita.
