Ingredients You’ll Need

For the Rasmalai Balls (Chenna):

  • 1 liter full-fat milk
  • 2 tbsp lemon juice or vinegar (mixed with 2 tbsp water)
  • 3 cups water (for syrup)
  • 1 cup sugar

For the Rabri (Flavored Milk):

  • 1 liter full-fat milk
  • 1/2 cup sugar
  • 4-5 saffron strands
  • 1/2 tsp cardamom powder
  • 5-6 chopped pistachios and almonds

Step-by-Step Rasmalai Recipe

Step 1: Make Chenna (Fresh Paneer)

Boil 1 liter of milk. Once it comes to a boil, reduce the heat and slowly add the lemon juice mixture until the milk curdles. Strain using a muslin cloth and rinse with cold water. Hang for 30 minutes to drain excess water.

Step 2: Knead and Shape the Balls

Once the chenna is dry but moist, knead for 8-10 minutes to form a smooth dough. Divide and roll into small flat discs.

Step 3: Cook in Sugar Syrup

In a wide pan, boil 3 cups water with 1 cup sugar. Add the discs and cook covered for 15 minutes on medium heat. They will puff up. Transfer them to cold water.

Step 4: Prepare the Rabri (Saffron Milk)

In another pot, boil 1 liter of milk. Stir continuously and let it reduce to half. Add saffron strands, sugar, and cardamom powder. Simmer and let flavors infuse. Add chopped nuts.

Step 5: Soak and Chill

Gently squeeze the cooked discs and place them in the saffron milk. Let it chill in the fridge for 3–4 hours.

Step 6: Serve Cold

Garnish with more chopped pistachios and a few saffron threads. Serve chilled for the best taste!
