What is a Vegetable Samosa?

A Vegetable Samosa is a cone-shaped, deep-fried pastry made with all-purpose maida (flour) and filled with a savory stuffing of spiced potatoes and peas. It’s vegan, vegetarian, and totally addictive.

Ingredients for 6 Samosas:

For the Dough:

  • All-purpose flour – 1 cup
  • Salt – ¼ teaspoon
  • Carom seeds (optional) – ½ teaspoon
  • Oil – 2 tablespoons
  • Water – as needed

For the Filling:

  • Boiled potatoes – 2 large, mashed
  • Green peas – ½ cup (boiled)
  • Ginger – 1 teaspoon, grated
  • Green chili – 1, chopped (optional)
  • Garam masala – ½ teaspoon
  • Cumin seeds – 1 teaspoon
  • Coriander powder – 1 teaspoon
  • Turmeric – ¼ teaspoon
  • Salt – to taste
  • Oil – 1 tablespoon
  • Fresh cilantro – chopped

Step-by-Step Recipe:

Step 1: Prepare the Dough

Mix flour, salt, carom seeds, and oil. Rub with your fingers until crumbly. Add water slowly to form a stiff dough. Cover and let it rest for 30 minutes.

Step 2: Make the Filling

Heat oil in a pan. Add cumin seeds, ginger, and green chili. Then add boiled potatoes and peas. Mix in turmeric, coriander powder, salt, and garam masala. Cook for 3–4 minutes. Add cilantro and let it cool.

Step 3: Shape the Samosas

Divide the dough into small balls. Roll each into an oval. Cut in half and fold into a cone. Fill with 2 tbsp of the potato mixture and seal the edges with water.

Step 4: Fry to Perfection

Heat oil in a deep pan. Fry samosas on medium heat until golden brown and crisp.

Step 5: Serve with Chutneys

Plate hot with tamarind and mint chutney for the perfect bite of spice, sweet, and crunch.
