What is Chicken Biryani?
Chicken Biryani is a layered rice dish made with spiced chicken and basmati rice, slow-cooked together to absorb every ounce of flavor. Our version is completely gluten-free and features boneless thigh chicken, known for its juiciness and tenderness, all infused with traditional Indian herbs and spices.
Ingredients You’ll Need:
For Chicken Marinade:
- Boneless chicken thighs – 500g (cut into chunks)
- Yogurt – ½ cup
- Ginger-garlic paste – 1 tablespoon
- Red chili powder – 1 teaspoon
- Turmeric – ½ teaspoon
- Biryani masala – 1 tablespoon
- Salt – to taste
- Lemon juice – 1 tablespoon
For Biryani Rice:
- Basmati rice – 2 cups (soaked for 30 minutes)
- Bay leaves – 2
- Cinnamon stick – 1
- Green cardamom – 3
- Cloves – 3
- Salt – to taste
For Layering & Cooking:
- Fried onions – 1 cup
- Saffron – few strands soaked in 2 tbsp warm milk
- Fresh coriander & mint leaves – handful, chopped
- Ghee or oil – 3 tablespoons
- Water – as required
Step-by-Step Chicken Biryani Recipe:
Step 1: Marinate the Chicken
Mix yogurt, lemon juice, spices, and ginger-garlic paste. Add chicken, coat well, and refrigerate for at least 2 hours or overnight for deeper flavor.
Step 2: Cook the Rice
Boil water with whole spices and salt. Add soaked basmati rice and cook until 70% done (grains should be firm). Drain and set aside.
Step 3: Cook the Chicken
Heat ghee or oil in a heavy pan. Add marinated chicken and cook until partially done (it will finish cooking with the rice).
Step 4: Layer the Biryani
In a deep pot, layer half the cooked chicken, followed by half the rice. Add fried onions, mint, coriander, and saffron milk. Repeat the layers.
Step 5: Dum Cooking
Cover the pot with a tight lid or seal with dough. Cook on low flame for 20–25 minutes to allow flavors to meld (known as dum cooking).
Step 6: Serve
Let the biryani rest for 10 minutes before serving. Gently mix and serve hot with cool raita or cucumber salad.
